Summer Calamari Salad


– 1,1/2 cup clean & cut up squid

– 1/2 cup Persian cucumber

– 1/2 cup thin Julienne jicama

– 1/2 cup celery in half of moon

– 1/2 cup small diced tomato

– 1/4 julienne red onion

– 1/4 cup julienne red pepper

– 1 Tbsp celery forest

– 1 cup baby greens

For the squid:

– 1/4 tsp salt & white pepper

– 1/4 tsp granulated garlic

–  a pinch smoked paprika

-1 Tbsp corn flour

– 3 onz olive oil

– 1/4 cup clam juice

1/4 cup white wine


In a bowl put in squid and seasoned well, then i n a hot pan poor in  oil and start sauteing calamari at high heat for about 3 mins,add white wine and clam juice, let it cook until all the liquid is gone and they turn nice and golden, about 5 more mins..keep on the side.

For the dressing:

– Juice of 1 lime

– 2 Tbsp rice/white vinegar

– 1/2 cup extravirgen olive oil

– 1 tbsp fresh chopped garlic

– S & P to taste

Assembling the salad:

In a bowl mix all the ingredients,add in calamari and tossed really well with the dressing.Serve salad in cold plate..Enjoy.
