Red roasted pepper sauce

Ingredients:
– 1 whole red pepper clean and medium diced
– ½ cup red roasted pepper
– 1 Tbsp tomato paste
– 3 cloves garlic
– ¼ cup white onion, chopped
– 1 Tbsp minced shallot
– 1 bay leaf
– 1 cup clam juice, chicken stock or vegetable stock
– ¼ cup white wine
– ¼ cup olive oil
– 2 onz sweet unsalted butter

Method:
In a sauce pot get together oil and butter, as soon the pot get hot, place in garlic, onion and shallots, let it cook for about 8-10 mins, until the combination gets translucid. Continue with the peppers, tomato paste and bay leaf, let it cook a little more and then poor in the wine, when wine is almost gone, then add in the stock, low down the heat to simmer, cook for about 15 mins when time is up puree the sauce really well and season with salt and pepper..If desire, passed the sauce thru a colander.

Pan fried tilapia over sautéed mixed vegetables and roasted-red pepper sauce

serve   3 portions                                                          
Ingredients:
–    1lb fresh tilapia fillet
–    2 Tbsp granulated garlic
–    ¼ cup corn meal
–    1 Tbsp salt
–    2 Tsp black pepper
–    ½ cup vegetable oil
Method:
Seasoned well the tilapia fillet with garlic, salt and pepper both sides, and lightly cover the fish with the corn meal, then in a sauté pan add the oil and as soon it gets hot start pan frying until turns nice and crispy, about  5-7 mins.

Mixed vegetables:
Here it can be use any kind of vegetables it depends of what is available or what kind would you like to have at the moment. I used: bottom mushroom in ¼, zucchini in ½ of moon, yellow squash, purple cabbage and waxy beans. First able precook the beans and cabbage in boiling salty water and then shock them in icy water to stop the cooking process, just before  service make a quick sautéed with olive oil, chopped fresh garlic, chopped   fresh thyme, salt and pepper. Start with the garlic, let it cook, then mushroom, cook for about 4 mins, then keep going with the rest.

Peruvian Ceviche

Ingredients :


Leche de tigre:

  • 2/3 cup fresh lime juice
  • 2 garlic cloves, smashed
  • 1 tbsp (packed) chopped fresh cilantro leaves
  • 1/2 ají limo,rocotto or habanero chile, seeded
  • 1/2 small red onion, chopped
  • 1/2 cup fine chopped celery
  • Kosher salt
  • 1 # white fish(fluke,flounder or sole) cut up in small cubes

Preparation : 

With a very sharp knife,trim the fish filet and cut it into very small cubes  and then refrigerate.

  For leche de tigre:
Set a fine-mesh sieve over a small bowl. Puree ingredients about 95 % , except  the fish , and 4 large ice cubes until smooth. Strain excess of liquid. Stir in lemon juice season with salt. Cover and chill. Add the fish to the mix end refrigerate back for 2 1/2 hrs before serving time. Accompanied  ceviche with some sweet potato chips or the crackers of your choice. Enjoy

Essential Mediterranean Spices

Basil: A staple in southern France and Italy, you’ll find the sweet yet peppery taste of basil in a wide variety of dishes — as the basis for pesto and often in tandem with tomatoes, in pasta sauces, Italian minestrone, salads and dressings, breads and marinades. Caraway Seeds, Black: The peppery taste of black caraway (nigella seed) is enjoyed on flat breads and with lentils and vegetables and in spice blends and pickles. The seed has long been valued for its healing properties.

Cloves: The warm, rich, spicy flavor and strong, sweet aroma of cloves is used to accent Mediterranean baked goods, stews, soups, and meats. It’s often used in tandem with cinnamon, ginger, and nutmeg. Of Southeast Asian origin, the spice is the unopened flower bud of the evergreen clove tree.

       –   4 onz remoulade o chipotle mayo

      –  2 slices tomato

  – – 3 rings red onions

 –  – 1 green leave

–  –  4 oz arugula salad

          Method:

     pre-set the oil at 365 f and fried the fish for about 4-5 mins,until nice and golden,set on the side.If you like toast the bread and spread the remoulade or mayo on it,place the tomato on the bottom part of the bread,add the fish,then put the lettuce and onions,cut up the sandwich in an angule and served with side french fries,chips or just the arugula salad on top.
